The bone-in beef belly is a cut of meat obtained from the front part of the cattle, characterized by the presence of layers of muscle, fat and bone. The layers of fat marble the meat and add flavor and juiciness. The presence of the bone gives the belly a high collagen content, which melts during cooking, making the meat soft.
