Entrecote is a fine and tasty cut of beef, obtained from the loin of the animal, between one rib and another. It is characterized by its softness and thinness, due to the fact that it comes from a muscle that is little used by the animal. For this reason, entrecote is perfect for cooking on the grill, on the griddle or in the oven. The ideal cooking is rare or medium, to best bring out its delicate flavour.
