WEIGHT

The bone-in beef rib is a fine and tasty cut of meat obtained from the upper part of the cattle's back, specifically from the loin. It is distinguished by the presence of a bone which gives the meat a more intense and rich flavour. The rib is characterized by good marbling, i.e. infiltrations of fat that melt, making the meat softer and tastier.
